Boudin King Cake
Every cake is stuffed with boudin, brushed with local cane syrup, and topped with a cracklin crumble. Those traveling along Highway 190 can visit Bourque’s Supermarket in Port Barre and try the bakery’s spicy twist on Boudin King Cake which includes pepper jack cheese in the stuffing and a drizzle of pepper jelly on top.
Community boucherie
A traditional boucherie is the best way to sample Cajun cuisine such as boudin, cracklin, backbone stew, and ponce. Two boucheries take place in Eunice. A Lundi Gras celebration is hosted at Lakeview Park and Beach, or you can head downtown Sunday morning before Fat Tuesday (Mardi Gras day).
Free gumbo
Part of the rural Mardi Gras ritual involves costumed participants on horseback, going from house to house, soliciting donations of food items to culminate in a community-wide gumbo. This tradition continues today! Upon their return, the tired revelers are greeted with a warm bowl of gumbo to rejuvenate them as the evening’s festivities are not nearly over.
Craft beer
Libations are no stranger to any Mardi Gras celebration, which is why we suggest visiting Bayou Teche Brewing in Arnaudville. Sample the brewery’s French farmhouse ale, Courir de Mardi Gras, or visit the Saturday before Fat Tuesday for the release of Biere Joie, an Imperial Stout with chocolate and coffee!
